| 1 | large | (or 2 small) lemons Finely grate lemon rind and add juice |

Method
Shake together or
beat egg with milk and oil. Pour
liquid mixture into first 5 ingredients and add lemon rind and juice. Mix all ingredients gently together. Put spoonfuls into muffin pans and bake 20 –
25 minutes at 200 oC.
Mixture should be
very moist.
Note: If baking in a fan forced oven reduce the temperature to 190oC
