BLUEBERRY  MUFFINS

 

 (If you double the quantity it makes approx 14 medium sized muffins)

 

1½ Cups Flour
2 Tbspns Baking Powder
¼ Cup Sugar
¼ tspn Salt
1 Cup Blueberries
1   Egg
¾ Cup Milk
¼ Cup Cooking Oil / Light Olive Oil
     
Optional:  
1 large (or 2 small) lemons    Finely grate lemon rind and add juice
   

(The lemons give the muffins a wonderful flavour)

 

 

Method

Shake together or beat egg with milk and oil.  Pour liquid mixture into first 5 ingredients and add lemon rind and juice.  Mix all ingredients gently together.  Put spoonfuls into muffin pans and bake 20 – 25 minutes at 200 oC.

 

Mixture should be very moist.

 

Note:  If baking in a fan forced oven reduce the temperature to 190oC
